Salsa verde

So yesterday while at the grocery store, I found some pork on sale.  I thought to myself, pulled pork sandwiches sound so yummy!  As I was thinking about what ingredients to pick up for cole slaw, I remembered that there was a recipe I wanted to try for carnitas.  Carnitas is a Mexican pulled pork dish.  You can eat it in burritos, taco salads, etc  My favorite way to eat them is with cilantro, lime, onion, and salsa verde.  So that was it! I would be making carnitas tomorrow.




So today was the day! I woke up early and put the pork in the crock pot. I followed this easy Carnitas recipe  I went about my day as my apartment started to fill up with the amazing smell over the next 8 hours.

But this isn't about carnitas, now is it?  It's about my salsa verde!  I have been making this salsa since I was about 7 years old.  My dad taught me how to make it, and I would make it any time I wanted ever since.



 Salsa Verde is my favorite salsa to eat when eating carnitas.  It is a light, spicy salsa.  It's also my husband's favorite.  






I promise this is a super easy recipe!  Just three ingredients!  I mean, c'mon, if a 7 yr old me could make it, I'm sure you'll be able to as well!  



Salsa Verde makes about 2 cups of salsa

ingredients:
3 tomatillios
4-7 chiles serranos (more or less depending on how spicy you want it)
salt
cilantro (optional)

directions:
take the outer shell off of the tomatillos and cut the top of the chiles and rinse.  Then add the tomatillos and chiles in a saucepan with some water and boil until the chiles and tomatillos are soft.  Once they are ready, put them in a blender or food processor.  

THIS NEXT PART IS IMPORTANT!
Make sure when you add them to the blender, you remove all the water, BUT DON'T GET RID OF THE WATER.  Add a splash or two of the water from the pan into the blender.  A little goes a LONG way!  (see pictures above.)  Puree until very smooth.  Then add some cilantro if you'd like.  If you feel like the salsa is still kind of thick, this is where you add some of that saved water.  Add salt to taste, and you're done!  Not too bad, eh?

home is where the Marine Corps takes us..


Being a military wife, you learn not to become too attached to a certain home.  Anything can change at the drop of a hat and there you go calling TMO or trying to find boxes from your hometown Walmart to pack all your things.

I have seen may plaques that contain the words, "Home is where the Marine Corps/ Army/ Navy, etc. takes us.."  I combined that, with a project I found on Pinterest.

This serves as a reminder of the places we've lived.  It's nice to look at and remember all the good times from each town.
